I found this recipe at
Sally’s Baking Addiction
and altered it to bring the calorie count down and to make it a bit healthier.
Here is the recipe:
1 and 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
6 packages of Truvia (or all natural sweetener of your choice)
1/4 cup light brown sugar, packed
1 apple, pureed
1 egg white, beaten
1 cup strawberries
1 cup blueberries
Preheat oven to 350 degrees. Spray 12 muffin tins with nonstick cooking spray. I used cupcake liners to help with clean up.
In a large bowl combine flour, baking soda, and cinnamon. Set aside. In a separate bowl, mix the brown sugar, sweetener, and pureed apple until no brown sugar lumps remain. Add the beaten egg white until fully incorporated. Add the wet ingredients to the dry ingredients until combined. Do not over mix. Fold in the strawberries and blueberries.
Divide the batter evenly between the 12 muffin tins. Bake for 15-20 minutes. Mine took about 20 minutes. Muffins will be golden in color and a toothpick inserted in the middle should come out clean.
Muffins will stay fresh in an airtight container at room temperature for 7 days. Muffins can be frozen. Make a batch and have breakfast for several days!
